SIU Press is cooking plain

We're thrilled that Cooking Plain, Illinois Country Style is now available. So thrilled, in fact, that over the holiday break we couldn't help but try some of the recipes ourselves. Our marketing manager cooked up this sweet potato pie, which is featured on page 146. Since we're still in the holiday spirit, we're going to share a few recipes with you. starting with this one.


Sweet Potato Pie 3

2 cups hot, boiled, mashed sweet potatoes

2 tablespoons butter

2 tablespoons lemon juice

1 cup sugar

Grated rind 1/2 lemon

1 teaspoon ginger

1 teaspoon cinnamon

1/2 grated nutmeg or teaspoon powdered nutmeg

1 teaspoon salt

2 cups milk

3 egg yolks, well beaten

3 egg whites, beaten stiff

1 unbaked 9-inch pie shell


Press sweet potatoes through sieve, add butter, lemon juice, sugar
which has been well mixed with lemon rind, spices, and salt. Beat egg yolks and combine with milk. Blend into sweet potato mixture and stir until thoroughly mixed. Fold in stiffly beaten egg whites. Turn into pie shell and bake at 400° for 10 minutes. Reduce heat to 350° about 30 to 35 minutes longer, or until filling has set and is lightly browned. Makes a 9-inch pie
